Coco's Caribbean Haus, a full-service restaurant fusing Jamaican, Haitian and broader Caribbean flavors, opened quietly in September in The Colony, Texas, according to Dallas CultureMap and the Dallas Morning News. The eatery is located at 4940 State Highway 121, Suite 135, in a strip center shared with The Yard Milkshake Bar, Tabla Indian and Pepper Thai, among others. A grand opening party is scheduled for Saturday, Oct. 17, where the full menu will be revealed. Founder Marsha Telfer, described as "Haitian-born" and "food-obsessed," moved to Texas from New York City about six years ago, according to an Instagram video cited by the outlets. She said her family is Haitian and Jamaican, and she plans to bring those flavors "plus a little bit of soul food" to North Texas diners. Coco's is Telfer's second North Texas venture; she co-founded Reggae Jerk Grill in McKinney in 2023. The culinary team includes Head Chef Adrian Telfer, drawing on family Jamaican recipes, and Chef Marie Exalus, responsible for most of the menu's Haitian influences. Menu highlights mentioned on Instagram include rasta pasta, jerk chicken, rice and peas, sweet plantains, plantain cups with spicy shrimp and a mac-stuffed spicy beef patty. The restaurant's interior features mirrored walls, forest green booths and tropical touches, the outlets reported.
