A new Caribbean restaurant, Coco's Caribbean Haus, has opened in The Colony, Texas, fusing flavors from Jamaica, Haiti and the greater Caribbean, according to Dallas CultureMap. The restaurant opened quietly in September at 4940 State Highway 121, Suite 135, in a strip center shared with The Yard Milkshake Bar, Tabla Indian, Pepper Thai and other businesses. A grand opening party is scheduled for Saturday, October 17. In a press release, the proprietors said they aim to bring North Texas an "experience inspired by Jamaican, Haitian, and Latin Caribbean culinary traditions." Founder Marsha Telfer, described as "Haitian-born, food-obsessed," moved to Texas from New York City about six years ago, according to an Instagram video. She said her family is Haitian and Jamaican and that she intends to bring those flavors, "plus a little bit of soul food," to diners. It is Telfer's second North Texas venture; in 2023 she co-founded Reggae Jerk Grill in McKinney. The culinary team includes Head Chef Adrian Telfer, drawing on Jamaican family recipes, and Chef Marie Exalus, responsible for most of the menu's Haitian influences. Menu highlights mentioned on Instagram include rasta pasta, jerk chicken, rice and peas, sweet plantains and plantain cups with spicy shrimp. The full menu will be revealed at the grand opening.
